I have installed the Ubuntu 14.04 LTS desktop. Actually the difference between destop version and the server version is just pre installed packages, linux core. When desktop version has GUI is just because it has been pre-installed. Server version can have GUI(GNOME) also even you would install the package. Anyway, for me who want to save the resouce by disable GUI, I would like to enter into terminal directly, here is the solution:
/etc/default/grub with your favorite editor, eg: nano:
sudo nano /etc/default/grub
Find out this line:
Change it to:
When running Nano, remember to sudo, otherwise, you couldn’t save the changed file.
- when desiring to enter graphical environment enter
sudo systemctl start lightdm. You will be taken to the lightdm login window.
- use ctrl+alt+ F1 key combo to get back to console you were at to exit out if so desired. ctrl+ alt+ F7 to get back to lightdm login. or ctrl +alt+ F1 through F7 per need or desire.

The command of sudo startx can boot to GUI on my system. It stops at certain stage.
